
Here’s my take on an Italian classic – Chicken Parmesan, made with grilled chicken and a fresh grated heirloom tomato sauce. This recipe doesn’t contain onion or garlic, making it a lower FODMAP meal!
I have two favorite things about this recipe – one is that the chicken is grilled instead of breaded and fried, making it a lighter way to prepare this protein. My second favorite thing here is the grated tomato sauce – this is the easiest homemade sauce recipe I make because all you need is a cheese grater. You grate fresh heirloom tomatoes over a large bowl and then add in some seasonings and that’s your sauce! Simple, light, and delicious!

Healthier Chicken Parmesan with Grated Heirloom Tomato Sauce

Ingredients
For the Chicken:
3 large chicken breasts
Salt and pepper to season
For the Heirloom Tomato Sauce:
3 medium heirloom tomatoes
1 tbsp Italian seasoning
1 tsp salt
1/4 c olive oil
2 tbsp honey
1 c mozzarella cheese
Fresh basil (optional garnish)
Instructions
1. Heat your grill (medium-high)
2. Butterfly the chicken breasts (cut them all the way through for 6 smaller pieces of chicken or leave them attached for 3 larger pieces) and season on each side with salt and pepper
3. Place the chicken breasts onto a flat, covered surface, and put parchment paper over the top. Pound each breast until even – abotu 1/2 inch thick
4. Put the chicken on the grill and cook for roughly 8 minutes, then flip
5. While the chicken grills, grate 3 heirloom tomatoes into a large bowl
6. Add the Italian seasoning, salt, pepper, olive oil, and honey to the bowl and whisk until combined
7. When your chicken has cooked for 5-6 minutes on the other side, spoon the tomato sauce onto each chicken breast and add the mozzarella cheese on top
8. Close the grill to let the cheese melt completely, then remove and plate
9. Heat then spoon the remaining tomato sauce over the chicken and garnish with fresh basil
