Description

These dairy free pistachio magnum ice cream bars are a delicious non-dairy ice cream treat – dipped in white chocolate and crushed pistachios, this is a no-bake summer treat that’s perfect to serve when it’s too hot outside to turn on the oven!


Ingredients

Units Scale

1 c softened pistachios

1 tbsp vanilla

1/4 c honey

1/3 c coconut cream

1/2 c almond milk

1 c dairy-free white chocolate chips

1 tbsp coconut oil (can sub avocado oil)

1/4 c chopped pistachios (optional garnish)


Instructions

1. Soak the pistachios in hot water for 20-30 minutes to soften

2. Rinse the softened pistachios and add them to a blender along with coconut cream, almond milk, vanilla, and honey

3. Blend until completely smooth

4. Pour the mixture into popsicle trays (linked in my Amazon storefront!)

5. Freeze for 3-4 hours until hardened

6. Add the white chocolate and coconut oil to a microwave safe bowl and melt it completely

7. Coat each magnum in the melted white chocolate and place on a parchment lined baking sheet

8. Top with chopped pistachios and set them in the freezer for another 10-15 minutes to harden
