Mom’s Cozy Tortellini Soup with Lean Ground Turkey

Every time I visit home I know that my mom’s famous tortellini soup is going to be on the menu at some point – and I always look forward to it! The whole family does, really. Last time I was back home I asked her to show me how to make it and I was shocked at how simple and quick it was to make!

I did make a few adjustments to her recipe to gear it more towards being an anti-inflammatory soup that has additional protein from lean ground turkey meat and bone broth. Check out the full recipe below!

Mom’s Cozy Tortellini Soup with Lean Ground Turkey

My mom’s super simple tortellini soup is a warming and hearty dinner packed with protein, veggies, and flavor (of course)


Ingredients

Units Scale
  • 1 package lean ground turkey meat
  • 1 tbsp extra virgin olive oil
  • 1 (9 oz.) package of tortellinis (I like cheese, but pick your fave!)
  • 1/2 tsp Italian seasoning
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • pinch of pepper
  • 1 can (14.5 oz.) diced tomatoes (keep liquid!)
  • 1/2 medium yellow onion (chopped)
  • 3 garlic clove (minced)
  • 946 ml chicken bone broth (1 regular carton)
  • 2 cups fresh spinach
  • 45 fresh basil leaves (torn)
  • salt (to taste)
  • pepper (to taste)
  • parmesan cheese (optional garnish)

Instructions

  1. Heat the olive oil in a pan over medium-high heat
  2. Add in the ground turkey, onion, Italian seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix everything together and continue to periodically mix until the turkey is cooked all the way through
  3. Add in the garlic and mix for 1-2 minutes then add in the chicken bone broth, tomatoes, and water and bring everything to a boil
  4. Once boiling, add in the tortellini and cook as long as the instructions call for (around 8 minutes is usually good for most) then mix in the basil and spinach until wilted
  5. Serve and garnish with optional fresh grated parmesan
